This makes 12 muffins which are freezable. You can warm them in the microwave from frozen and have one for breakfast with natural yoghurt.

Apple Bran Muffins


  • 45g All-Bran cereal

  • 225ml oat/ almond/ milk of your choice

  • 3 tbsp maple syrup

  • 100g whole wheat flour

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 tsp cinnamon

  • 1/2 tsp ground ginger

  • 180g oat bran

  • 80g raisins

  • 1 large apple cut into small cubes

  • 1 large egg beaten

  • 115ml unsweetened apple puree

  • 2tsp vegetable oil


  1. Mix the All-Bran and milk in a bowl, let it stand for a few minutes.

  2. In a large bowl, mix the flour, syrup, baking powder, baking soda, salt and spices. Stir in the oat bran, raisins and apple.

  3. In another bowl combine the egg, vegetable oil and apple sauce, stir in the All-Bran and add the wet ingredients to the dry ingredients and combine.

  4. Spoon the mixture evenly into 12 lined muffin tray. bake at 175C/350F/Gas 4 for 20 minutes, or until lightly browned.

Mexican Ranch Eggs

These eggs are a little spicy and very filling. The bean chilli surrounds the eggs and once in the oven the eggs are cooked to perfection!


  • 2 tsp olive oil

  • 1 medium onion chopped

  • 2 cloves of garlic crushed

  • 1 tsp chilli powder

  • 1 small jalapeno pepper, chopped finely

  • 1 tsp each of dried oregano and ground cumin

  • 2 tins chopped tomatoes

  • 250 ml vegetable stock

  • 1 tin black beans (drained and rinsed)

  • 1 tin chick peas (drained and rinsed)

  • 1 tbsp chopped coriander

  • 2 tbsp chopped flat leaf parsley

  • 6 large eggs

  • 6 small wholemeal tortillas


  1. In a large non-stick frying pan, heat the oil over a medium heat and cook the onion, garlic, jalapeno pepper, chilli powder, oregano and cumin for about 3minutes. Add the tomatoes, vegetable stock, black bean, chick peas and both half the coriander and parsley; bring to the boil.

  2. Reduce the heat and simmer for about 15 minutes, or until slightly thickened, pour into a 13x9in baking dish

  3. Break one egg at a time and carefully slide into the bean mixture, cover with foil and bake in a 220c (Gas 7) oven for about 10 minutes or until the eggs are done to your liking.

  4. Sprinkle with remaining coriander and parsley and serve with tortillas.
